    Bartender extraordinaire Dale DeGroff made his name at the legendary Rainbow Room, where his classic blandad drink menu marked a avfärd from the highball era of the ’80s and helped to usher in the gourmet-driven drinks of today. The author of “The Craft of the Cocktail” and “The Essential Cocktail,” DeGroff came to the city in 1969, when “post-Prohibition bar life” was being pushed aside by drug-driven hippie culture. “I understood pretty quickly that all the neighborhood bars and grills and fancy blandad drink lounges [here] were sort of like the redwoods in California — a natural resource of the city — and inom was just drawn to it,” says DeGroff, 63. His new show, “On the Town: A Salute to Saloons, Neighborhood Bars and Legendary Cocktail Palaces,” hits Macao Trading Co. on Dec. 12 with an evening of classic cocktails, music and stories (for tickets, go to kingcocktail.com).     His professional tenure began when bartending was a workaday, fairly unglamorous occupation, but he’s gone on to see the dawning and blossoming of the cocktail revolution—a revival he helped spawn during his trailblazing tenure at New York’s Rainbow Room in the 1980s and ’90s. But when a journalist recently asked the author of The Craft of the Cocktail—republished last month in an updated and expanded edition—what had been the biggest game-changer in modern bartending, he didn’t hesitate: “Bar teams.”

    Bartending legend Dale DeGroff visited Australia this week to help Grey Goose put the finishing touches on its world-first standalone bar, Le Martini.

    Created in partnership with Crown Melbourne, the intimate 33-seat venue will open next month, celebrating the world’s most iconic cocktail in a lavish setting designed to create a memorable and immersive experience.

    DeGroff is one of the world’s most famous bartenders. He’s the author of two of the modern cocktail world’s most influential books – The Essential Cocktail and Craft of the Cocktail

    He began his bartending career in Los Angeles, hoping to break into the movies. That didn’t happen, so instead he turned the bartending world on its head. From 1987 to 1999 he rose to prominence as the chief bartender in the Rainbow Room at Rockefeller Center in New York, where his emphasis on classic cocktail recipes and high-quality ingredients led to huge acclaim.
